There should be a way to document what films you have watched

after placing a film in the watch list there should be a section for viewed films.. anyone agree?

Many people use ratings to indicate that they've watched a movie.  But if you don't want to rate movies on the IMDb you can create a new "watched" list, then move the titles from the Watchlist to the "watched" list.

I figured this feature out, however I then found films I had watched that weren't in my watch list because of viewing them previous to my account. But the site doesn't allow me to add films that aren't in my watch list to personal lists from their page.

You can add a title to any of your lists from the film's page.

On the main page of the title is a yellow "Watchlist" button.  Next to that button is an arrow which opens into a drop-down of all your lists.  Just click on the list you want to add your title to.

But basically, as sienel says, if you want a watched list you can make one otherwise staff consider ratings and check-ins to cover the same territory as a hypothetical companion to the Watchlist (that would be automatically created and available through some kind of button), so they aren't considering making one at the moment.
