After screening an early incarnation of our film at a 2014 film festival, we went back into production, significantly changed the film, and finished it in March 2015. Can we change the date of the film on IMDB to 2015?

In a word, No.

IMDb records the date of first showing as the year in the title.

This is documented in the FAQ How are titles formatted? How do you choose the year shown in the title? which states:
We also associate the year of first public screening with each title as an aid to recognizing and distinguishing similar titles. For TV titles this is the broadcast year of the first episode. For movie titles this year is either the year of general release or of a festival presentation if earlier (note that closed screenings for the crew or the media or test screenings of the unfinished product for marketing reasons do not count as public screenings).
Note the phrase "or of a festival presentation if earlier".
